Questions
Are the deleted pages really gone?
Yes. The new file is built by copying the pages you kept into a fresh document, rather than by editing the old one — which matters, because removing a page from a PDF in place leaves its contents in the file. Anything on a deleted page is not in what you download.
Can I get them back?
Not from the new file. Your original is untouched on your computer, so keep it until you are happy with the result.
How many can I remove?
As many as you like, as long as one page is left. A PDF with no pages is not a PDF.
