What is in a PDF’s metadata?

A title, an author, a subject, keywords, and the name of the program that produced it — and often a version number with it. It is separate from the text of the document, and it travels with the file wherever it goes.

Why would I want to clear it?

Because it is frequently filled in without anyone noticing. A document exported from a template can carry the original author’s name; the producer field often identifies your software and its exact version.

Does this change the text of my document?

No. Only what the file says about itself. Anything written on the pages stays exactly as it is — including a name typed into the document itself, which this cannot see.
